This italian tomato and bread salad is perfect for the little ones.
The tomatoes are the perfect shape for teeny tiny hands to pick up and easily nibble on and the bread is wonderfully softened thanks to the gorgeous mix of tomato juice and extra virgin olive oil.
Miss G. adored this salad for lunch and happily gobbled up the gorgeous mix of tomatoes, bread and basil leaves.

Begin by chopping up all of your tomatoes. I cut the roma tomatoes into wedges, halved some of the heirloom tomatoes and quartered the rest.
Tear the bread into chunky pieces and pop into a large bowl.
Add the tomatoes, a pinch of salt and garlic and stir to combine. Stand for 5-10 minutes so the bread can soften and drink up the tomato juice.
Add the basil and extra virgin olive oil and stir to combine.
Serve with a little extra drizzle of olive oil (and drizzle of balsamic vinegar for the adults) and a few extra basil leaves.

INGREDIENTS
1/2 loaf of day old bread, torn into pieces
3 roma tomatoes, cut into wedges
1 large punnet heirloom tomatoes, halved
1 garlic clove, finely minced
1/4 cup extra virgin olive
1 bunch basil, roughly chopped
METHOD
Place the bread, tomatoes and garlic into a large bowl and mix to combine. Stand for 5-10 minutes or until the bread is softened and soaked up the gorgeous tomato juice. Add the olive oil and basil and mix to combine. Serve with a little extra drizzle of olive oil (and a drizzle of balsamic vinegar for the adults) and fresh basil leaves. Enjoy!
