Todays lovely lemon loaf really couldn’t be more simple.
It so simple that Miss G. and I managed to stir the batter together and have this heavenly loaf baking away in the oven in less than 10 minutes.
And the results though couldn’t be more sublime.
This gorgeously golden loaf is not only heady in lovely lemony scent but is chock full of wholesome, totally good for you ingredients; yoghurt, macadamia nut oil, agave syrup and wholemeal flour.
Along with a little fruit, this loaf makes the perfect baby led weaning morning or afternoon tea snack and is also the perfect addition to any lunch box.
To create this lovely lemon loaf simply…
Begin by preheating your oven to 180 degrees celsius (350F) and line a standard loaf tin with baking paper.
Place the eggs, yoghurt, macadamia nut oil, agave syrup, vanilla and lemon zest in a large bowl and whisk to combine.
Add the flour and baking powder and mix to combine.
Pour the batter into the lined loaf tin.
Bake for 45-50 minutes or until the loaf bounces back to the touch. Allow to cool for 5 minutes or so in the tin before removing to cool completely on a wire rack.

3/4 cup cold pressed macadamia nut oil (or lightly flavoured olive oil)
1/2 cup agave syrup
1 cup plain greek yoghurt
1 teaspoon vanilla

Hi and thanks for sharing this recipe! Although I have older children I love all your recipes and so do they! I made this today switching in rice syrup for the agave and I added raspberries. It worked out really well. Look forward to more great ideas. X

Hi! Yay! I am so happy to hear you and your daughter are enjoying my site! Although I don’t bake gluten free I feel pretty confident saying that most of my recipes would work simply by substituting the plain wheat flour with a gluten free version ( there are so many these days – I was amazed walking up and down the aisle at our local health food shop over the weekend). I am sorry I can’t give you more information, I really should attempt a few gluten free versions to better my knowledge! Good luck and happy baking x

Made this for me and my flatmates for movie night tonight. was very moist and flavorful. I used light olive oil, agave nectar and added 3 tablespoons of chia seeds. It was wonderful and will be using this recipe many times form now on. Thank you!
