It feels so wonderful to be back in the kitchen after a beautiful, family filled, food fuelled Christmas break and today we are frying up another batch of fantastic fritters.
It’s no secret that Grace absolutely adores fritters. Gosh, since beginning our blw journey I don’t think a week has gone by where I haven’t cooked up at least one batch of the gorgeously golden darlings. She devours them and todays version chock full of broccoli and cauliflower were no different.
Although this recipe is quite simple, the few ingredients marry together beautifully to create a delicious, light and fluffy fritter perfect for little hands to pick up and nibble on with ease.
I also managed to sneak almost an entire head of broccoli and cauliflower into the batter, so these little babies are bursting with veggie goodness.
If your little one is just beginning their baby led weaning adventure, I can’t recommend this recipe enough. These fritters are what I consider to be the perfect texture for beginners (soft enough to nibble on, yet firm enough not to be crushed by tiny grips) and their shape make them so easy to hold! I also love to freeze left over fritters for another day, just wrap individual portions, pop into a freezer safe container and stash in the deep freeze for up to 3 months.
To create these gorgeously golden broccoli & cauliflower fritters simply…
Begin by chopping 1 head of broccoli and 1 head of cauliflower into small florets.
Bring a large pot of water to the boil, add broccoli and cauliflower florets and cook for 5-7 minutes or until tender. Drain and place the tender florets into a large mixing bowl.
Use a fork to slightly mash the broccoli and cauliflower. Set aside 4 cups to cool (to speed up the cooling process I popped our vege into the fridge for 10 minutes or so).
Add the self raising flour, eggs, dijon mustard and garlic and mix to combine.
Heat a good drizzle of oil in a large frypan over medium-high heat and cook rounded tablespoons of the fritter mixture in batches, for 1-2 minutes on each side or until crisp and golden. Add extra oil as necessary. Place the cooked fritters on kitchen paper to absorb excess oil.
Serve the fritters warm alongside a simple salad of cucumber and roma tomato wedges. Enjoy x
broccoli & cauliflower fritters
INGREDIENTS

1/2 cup parmesan cheese (grated)
1 heaped teaspoon garlic, minced
1 heaped teaspoon dijon mustard
2 eggs
olive oil, to fry in
wedges of roma tomato and cucumber, to serve

This looks lovely and I’m going to make it for my little girl this evening. I’m not the best cook so apologies if this is a silly question but when freezing do you just freeze the batter or should you fry it first and then freeze? tIA

Not a silly question at all, I cook the fritters first, allow to cool, wrap individual portions and pop into a freezer safe container. These fritters keep beautifully in the deep freeze for up to 3 months. Good luck and I hope your little girl enjoys them xxx

There are so many different theories about introducing foods (eggs/nuts especially) so its really confusing. At our six month check up with the paediatrician I asked my Dr what is the best method and he said because of our family history of no allergies we could introduce foods from 6 months. He also mentioned a recent study showed the delayed introduction of foods like eggs/nuts is linked to allergies so its best to introduce a greater variety of food from an early age. That said you should really chat to your health care practitioner so they can take into account your family history and specific circumstances. I hope this helps. X

I made these the other day for my 7 month old and he LOVED them. He picked up every last crumb! I’m still new to this baby led weaning stuff, so we had only done fruit and roasted vegetables before trying this recipe. I had my doubts, especially since he has no teeth (!) but he crushed it. Hi – they sure can. Simply defrost them first. And yes, regular plain flour will work BUT you need to add 1 teaspoon baking powder too. Kayla xx
