These peach coconut and vanilla popsicles are a breeze to make.
With Gracie at school – Harry and I spent a half hour in the kitchen blending these babies together and I’m so glad we did.
These orange swirled icy treats make the perfect hot summer afternoon snack.
Grace was so excited to find them nestled in the freezer after she burst through the door screaming ‘I’M HUNGRY’.
She demolished the peachy popsicle in record time and proceeded to announce how sad she was that Harry had all the fun in the kitchen that day and she missed out – I told her we would make more over the weekend!
To make your own peach coconut and vanilla popsicles simply…
Begin by placing your coconut yoghurt, vanilla bean paste and rice syrup into a small bowl and mix to combine.
NOTE: If you can’t find coconut yoghurt, natural or greek yoghurt work beautifully too.
Set aside.
Next – halve 3 peaches, remove the stones and slice into small wedges.
Place the wedges of peach into the jug of a food blender along with 1/3 cup of the coconut yoghurt mixture. Blitz until smooth and luscious.
Grab your popsicle moulds and alternate layers of coconut yoghurt and peach to fill each mould. Use a skewers to swirl the layers. Pop into the deep freeze overnight.
When you’re ready to serve, run each mould under hot water to help loosen and remove the popsicles. Enjoy X

- 350 grams coconut yoghurt (or natural or greek yoghurt)
- 1/4 cup (90 grams) rice syrup (or any other liquid sweetener like honey or maple syrup)
- 1 tablespoon vanilla bean paste
- 3 peaches, stones removed and chopped into small wedges

- Place the coconut yoghurt, rice syrup and vanilla bean paste into a small bowl and stir to combine. Set aside.
