It’s not only a super simple recipe but it manages to sneak a tonne of veggie goodness into your kids.
PLUS the corn chips are the perfect crunchy vehicle to entice even the fussiest eaters (hmmm…Mr. Harry!).
Seriously this colourful guacamole is a HUGE hit with the entire family…the lime is sublime and depending on your taste buds (or kids ages) the chilli and coriander are totally optional!
This recipe takes a mere 10 minutes to make. And I promise, will become your ‘go-to’ recipe for sneaking nutritional goodness into the kids during the week when life is crazy and you have zero time to cook!

To make your own veggie loaded guacamole simply…
Begin by grabbing a big wooden board, large mixing bowl, sharp knife and gather your ingredients.
Finely chop half a red onion.
Quarter your cherry tomatoes.
Finely slice half a red capsicum.
Roughly chop a large handful of coriander (or mint) leaves.
And slice 2 avocados in half, remove the seeds and scoop out the flesh.
Place the capsicum, red onion, cherry tomatoes, avocado and coriander into the bowl.
Zest and juice over the lime.
Drizzle over a tablespoon or two of extra virgin olive oil.
Season with sea salt.
Give the mixture a big stir, mashing the avocado as you go. Taste and check for seasoning – add more lime juice or sea salt if necessary.
Decant the veggie loaded guacamole into a serving bowl and nestle on a wooden board. Surround the bowl with a generous helping of your favourite corn chips (we love these purple hued chips) and top with a scattering of coriander and chopped red chilli if you wish. Enjoy x

Ingredients
- half a red capsicum, finely chopped
- 100 grams cherry tomatoes, quartered
- half a red onion, finely chopped
- large handful coriander, roughly chopped
- flesh of 2 large avocados
- zest and juice of 1 lime
- good pinch of sea salt
- 2 tablespoons extra virgin olive oil
- To serve; extra coriander, corn chips and red chilli (optional)
Instructions
- Place the capsicum, cherry tomatoes, red onion, coriander, avocado flesh, lime zest and juice, sea salt and olive oil into a large bowl. Stir to combine – mashing the avocado flesh as you go. Taste the veggie loaded guacamole for seasoning and add a little extra salt or lime, if desired. Decant the guacamole into a serving bowl, top with extra coriander and chilli (if using) and serve alongside a generous helping of corn chips. Enjoy X
- HINT: if you’re not serving the guacamole immediately…pop the avocado seeds into the guac, cover with cling film and pop into the fridge.
