This year I made a new years resolution to exercise daily.
And I do.
Mentally and physically – I feel wonderful.
But now our mornings are busier than ever!!!
Thankfully I have breakfast sorted thanks to these 7 quick and easy recipes.
These breakfast recipes are simple.
Can be made ahead of time [I’ll show you how below].
And are chockfull of nutritional goodness.
These delicious recipes get us out of the front door on time AND with full, happy tummies…every. single. morning.
If like me, you struggle during the busy week – I promise these recipes will make your breakfast game strong without a box of store-bought cereal in sight!
boiled eggs and soldiers – this breakfast takes no time. I pop the saucepan onto the stove top whilst I make a coffee (for moi) and toast (for the kids) and by the time the toast is buttered and I’m caffeinated – our eggs are ready to go. If you’re really pressed for time in the am – boil your eggs the night before and pop them in the fridge. Easy peasy.
a super creamy green smoothie – each sunday I make smoothie freezer bags. I pop a serve of banana, pineapple, spinach, mango, avocado and ice into individual bags and pop them into the deep freeze ready for the morning. For breakfast I place a freezer bag of frozen goodies into the blender with a cup of water and a squeeze of vanilla and blitz until smooth. With a piece of toast – the kids love this for breakfast.
easy peasy 2 ingredient pancakes – just mash a banana with 2 eggs, pour into a hot pan and voila pancakes are ready to eat. Topped with berries and yoghurt (and a sprinkle of home made muesli), these protein packed pancakes are always a hit with the kids.
healthy home made muesli – on a sunday afternoon, Grace and I will stir together a batch of our home made muesli, let it cool then scoop it into a big glass jar ready for the week ahead. With a dash of milk (or yoghurt) breakfast is ready! So simple.
an oldie but a goodie – we have baked these mighty morning muffins umpteen times. The combination of oats, sultanas, carrot and banana make them a hearty on-the-go breakfast. And these muffins can be frozen! I bake a big batch on the weekend, wrap individual portions then stick them in the deep freeze for during the busy week.
Another freezer friendly muffin recipe the kids love are our raspberry and banana breakfast muffins. Again, I bake these babies on the weekend, wrap individual portions then pop them into the freezer. To serve, I place the muffins in the fridge the night before and by morning we have fresh muffins ready to be devoured. In winter, we heat the muffins in the microwave for a warm and snuggly start to the day. Perfection.
When I bake our mini pea & pesto frittatas its usually for dinner [along with our sweet potato fries and a simple rocket salad] and our leftover frittatas are gobbled up the next day for breakfast…usually nestled on a piece of toast. For me, this recipe is the epitome of ‘cook once, eat twice’ magic. Plus I love that the kids are starting the day with a good dose of protein and veggies. Winner!
