These mini vegetable loaves are your ideal lunch box filler! Chock-full of carrot, zucchini and corn these mini loaves are made even more delicious thanks to the beautiful combination of parmesan, mozzarella cheese and fresh herbs! Sah gud. I pop these into graces lunch box with sliced cherry tomatoes, coins of cucumber and they never return home!
pea and ricotta fritters
Bite sized on-the-go snacks are always a hit in lunch boxes! Why? Because our kids are often too busy chatting or busting to go play to focus on lunch. So being able to pack a protein [and veggie] packed grab & go lunch is a great idea. And these pea and ricotta fritters are just that. Full of goodness and after a couple of bites, tummies are filled and ready to play.
