This banana blueberry and coconut loaf is…delicious! We baked this lovely loaf over the weekend and…it’s all gone. Okay, okay – I stashed a couple of slices in the deep freeze. But it’s seriously gud.
If you love a good banana bread. You’re going to love this baby. The blueberries and coconut make this loaf. The molten jammy blueberries through-out the loaf are divine. And the coconut adds a touch of tropical goodness.
But the silent hero of this banana blueberry and coconut loaf is the sour cream. Yep, this humble ingredient lends the most tender qualities to the crumb creating a luscious moist loaf.

To make your own banana blueberry and coconut loaf with your kids, follow these simple steps…
Begin by preheating your oven to 170 C (350 F) and line a large (approx. 28 cm) loaf tin with baking paper. Set aside.
Wash and dry your child’s hands thoroughly and set them up safely at the kitchen bench.
Ask your little ones to place the wholemeal flour, baking powder, salt and cinnamon into a sieve and to sift the flour mixture into a large bowl. Set aside.
Next, ask your kids to peel 3 bananas and place into a separate bowl.
Arm your little ones with forks, and ask them to mash the bananas. Set aside.
Ask your little ones to place the brown sugar, sour cream and butter into the bowl of your mixer. Turn the mixer onto medium-high speed and beat for 4 minutes or until they are light and fluffy.
Add the vanilla and beat for another minute.
Ask your little ones to crack the eggs and add them to the mixer bowl one at a time and beating to blend after each addition.
Reduce the mixer speed to low. Add the flour mixture and mix until just combined.
Add the blueberries, mashed banana and coconut and mix until just combined.
Pour the batter into the prepared tin. Top with a sliced banana.
Bake for 1 hour or until a skewer inserted removes cleanly. If your loaf is browning too quickly before cooking through, simply pull the loaf out of the oven, cover with aluminium foil and return to the oven for the remaining cooking time.
Allow the loaf to cool for 10 minutes before removing from the tin to cool completely on a wire rack.

Ingredients
- 2 1/4 cups (340 grams) wholemeal (wholewheat) flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon, ground
- pinch salt
- 1 cup (170 grams) brown sugar
- 2/3 cup (170 ml) sour cream
- 1/2 cup (125 grams) butter
- 1 teaspoon vanilla extract
- 3 eggs
- 3 bananas, mashed (approx. 2 1/4 cups) PLUS 1 banana sliced, to decorate
- 1 cup (125 grams) blueberries (fresh or frozen)
- 3/4 cup (70 grams) shredded unsweetened coconut
Instructions
- Preheat oven to 170 C (350 F) and line a large loaf tin with baking paper. Set aside.
- Sift flour, baking powder, salt and cinnamon into a large bowl. Set aside.
- Using an electric mixer on medium-high speed, beat brown sugar, sour cream and butter in a large bowl until light and fluffy (approx. 4 minutes).
- Add vanilla and beat for 1 minute.
- Add eggs, one at a time. Beating well after each addition.
- Reduce speed to low, add flour mixture and mix until just combined.
- Add mashed banana, blueberries and coconut and mix until just combined.
- Pour batter into prepared tin and top with sliced banana.
- Bake for 1 hour or until a skewer inserted removes cleanly. If your loaf is browning too quickly before cooking through, simply pull the loaf out of the oven, cover with aluminium foil and return to the oven for the remaining cooking time.
- Allow to loaf to cool for 15 minutes before placing on a wire rack to cool completely. Enjoy x
Notes
Store loaf in an air-tight container in the fridge for 2-3 days.
