These savoury muffins are a delicious way to sneak extra veggies into your kids lunch box! They’re gorgeously golden (thanks to the cheese) and are chock-full of corn, zucchini and carrot. These savoury muffins can be frozen. Just be sure to grab them out of the deep freeze the night before so they defrost in time. Can I tell you – when I pop one of these savoury muffins into the kids lunch boxes – they never return home!

These super simple one bowl corn and zucchini fritters recipe is another one to add to your lunch box repertoire!
These fritters couldn’t be simpler to make! Simply pop all of the ingredients into a big bowl, stir, fry and voila – DONE!

And yes, these fritters are FREEZER FRIENDLY! Simply pop the cooked and cooled fritters into a freezer safe bag and stash in the deep freeze for up to 3 months!
