Hand’s up if you love a bliss ball? ME TOO!!!!!!!!!!!!!!!!!!!!!!!!!!!!! But you know what I don’t love? A sickly-sweet date-based bliss ball. Yuck. No, thank you! That’s why I created these EPIC date-free darlings!

Because these bliss balls don’t have the stickiness of the dates to hold them together they do take an extra splash of water when blitzing and a little squishing together to hold shape. So rather than rolling them together, I suggest using cupped hands to squash them into shape.
Short on time?
Skip bliss balls and make bars! Pour the mixture into a 20cm x 20cm brownie tin and flatten. Pop into the fridge for an hour or until set and cut into bars. Drizzle with a little melted chocolate and voila you’re done. Making bars saves 20 minutes of prep time!
Can you use shredded (or desiccated) coconut instead of coconut flour?
Of course! Your date-free bliss balls mixture will need just a little more blitzing that’s all.
Can I swap the cashews for other nuts?
Yes! This recipe is infinitely adaptable. I’ve used almonds, cashews and peanuts – ALL with delicious success!
Do the nuts have to be roasted?
They don’t. BUT, if you can roast them prior the flavour of the bliss balls is NEXT LEVEL. So so so worth the effort lovely. Just be sure to let the nuts cool completely prior to blitzing!
How to store the bliss balls in the freezer?
I simply stash the bliss balls in a snap lock bag and pop straight into the deep freeze. You can of course place the bliss balls into an air tight freezer safe container if that suits. They will keep for up to 2 months but I promise they will vanish way before then!
Can you reduce the sugar?
Absolutely! You can reduce the sugar by reducing the amount of pure maple syrup in this recipe. I used 6 tablespoons of maple syrup to suit our tastes. If your keen to limit the sugar I suggest adding the maple syrup incrementally and tasting the mixture after each addition – stop when you’re happy with the sweetness.
Do I need the fancy toppings to decorate?
No way! A simple scattering of chopped nuts or shredded coconut will do! OR leave them naked! Whatever suits you lovely. I opted for the pistachios, freeze dried raspberries and rose petals for no other reason than prettiness.
To make your own date-free bliss balls simply…
Place the toasted cashews, coconut flour, cacao and salt into the large bowl of a food processor and blitz until finely chopped.
Add the peanut butter, maple syrup, cacao, vanilla bean paste and a pinch of salt to the bowl. Pop the lid on and blitz until the mixture comes together. Add a splash of water if required to bring the date-free bliss balls mixture together.
Take heaped teaspoons of the mixture and shape into rounds.
Pop the chocolate into a heat proof bowl and carefully place the bowl over a saucepan of simmering water. Do not let the bottom of the bowl touch the water. Heat for 3-4 minutes or until the chocolate is melted.
Dip each date-free bliss ball into the melted chocolate allowing excess to run off. Carefully place onto a tray lined with baking paper and top with a sprinkle of freeze dried raspberries, chopped pistachios or rose petals. Enjoy x

Ingredients
- 2 cups (300 grams) cashews, toasted
- 1 cup (130 grams) coconut flour OR 1 cup (50 grams) shredded coconut
- 4 heaped tablespoons cacao
- pinch of sea salt
- 1 cup (250 grams) natural peanut butter
- 6 tablespoons pure maple syrup
- 1 teaspoon vanilla bean paste (or extract)
- 150 grams dark chocolate
- To decorate; finely chopped pistachios, rose petals and freeze dried raspberries.
Instructions
- Place the cashews, coconut flour (or shredded coconut), cacao and salt into the large bowl of a food processor and blitz until finely chopped.

Notes
This recipe can be made as bars. After step 2 simply press the mixture into a square (20 cm x 20 cm) tin lined with baking paper. Refrigerate for 1 hour (or until set), cut into 16 bars and drizzle with melted chocolate.
Bliss balls are best kept in the fridge – will keep in an air tight container for 3-4 days.
Bliss balls (or bars) are freezer friendly. Store in an air tight container for up to 3 months.
