I love brownies.
Always have. Always will. And these no-bake brownies are now my absolute FAVOURITE.
And by looking at the pics, it’s easy to see why – they are chocolate heaven!
Now, here’s why YOU’LL love these no-bake brownies…
- They’re super chocolatey, very gooey but not sickly sweet.
- They come together in one bowl.
- They take less than 30 minute to create. Yes, they have to ‘set’ in the fridge for 1 hour BUT if you’re impatient like me, simply pop the brownies into the freezer for 15 minutes whilst you make the frosting.
- They’re chock full of healthy ingredients – oats, coconut, medjool dates and nuts.
- They’re egg and refined sugar free!
- They’re a delicious vegan and raw treat!
- They CAN BE MADE NUT-FREE! If your family has allergies, or you’d like these to be lunch box friendly – simply replace the nuts with oats/coconut!
- They’re freezer friendly! When stored in an air tight container – these no-bake brownies will last up to 3 months in the deep freeze!
- The frosting is exceptional, so luscious but totally optional. If you’d prefer to keep these brownies a little more virtuous you can skip the frosting. Simply top the no-bake brownies with shredded coconut or a quick dusting of cocoa powder instead!
- These no-bake brownies are very adaptable. If you don’t have pecans – use almonds, cashews, macadamias or walnuts. Or as said earlier, ditch the nuts all together and replace with more oats/coconut.
Tips and tricks to creating the BEST no-bake brownies…
- Begin with the best ingredients and make sure everything is fresh. Fresh nuts, oats, coconut and soft medjool dates will make all the difference.
- Choose a very high quality dutch-processed cocoa powder. We use an entire cup of cocoa in this recipe which creates the most decadent and chocolatey no-bake brownies ever. So be sure to select the best you can find.
- Add a pinch of sea salt to the batter. Salt = flavour. And adding salt to these brownies won’t make them taste ‘salty’, but will enhance the flavour of everything else – especially the chocolate! It gives everything a subtle boost of flavour. YUM!
- Blitz the oats, coconut, pecans and cacao super super fine. Blitzing everything to almost a powder like consistency helps to create a batch of no-bake brownies that have a very luscious texture.
- More blitzing! When adding the medjool dates, maple syrup and vanilla – be sure to process the mixture for another 2-3 minutes. This will incorporate the dates beautifully, leaving no trace of them except that gorgeous lustre and sheen.
- Press the mixture into a 20 x 20 square tin! This size creates the perfect sized brownie when cut into bars. However, don’t stress if you don’t have this sized tin at home – a round cake pan will do fine!
- Be sure to use parchment (or baking) paper to line the tin! This helps lifting the brownies out so much easier! Oh and makes washing up a breeze.
- Cut into 12 (or 16) bars. This helps the brownies last longer and will give you a sneaky freezer stash for those days!
To make your own no-bake brownies follow these simple steps…
Step one:
Place the oats, coconut, pecans, cacao powder and salt into a food processor and blitz until finely chopped.
Step two:
Add the medjool dates, maple syrup and vanilla and blitz for 2-3 minutes or until lusciously smooth and combined.
Step three:
Place the mixture into a 20cm x 20cm square tin lined with baking paper and spread evenly.
Step four:
Place the no-bake brownies into the fridge for an hour to set.
Step five:
Meanwhile, prepare the frosting.
Pop the dark chocolate, milk, coconut oil, vanilla and salt into a small saucepan and place over low heat, whisking continuously until melted. Pour the mixture into a bowl and pop into the fridge. Every 5 minutes or so remove the bowl from the fridge and whisk – this helps to create a gloriously smooth and luscious frosting.
Step six:
Once cool, spread the frosting over the brownies. Cut into 12 or 16 bars and serve.
These bars are best kept in the refrigerator or freezer in an air tight container.

Ingredients
no bake brownies:
- 1 cup (95 grams) rolled traditional oats
- 1 cup (80 grams) desiccated or shredded coconut
- 1 cup (125 grams) pecans (walnuts or cashews) (NUT FREE VERSION: replace with an extra 1/2 cup oats and 1/2 cup coconut)
- 1 cup (105 grams) dutch processed cocoa or cacao powder
- pinch of sea salt
- 10 medjool dates, pit removed
- 1/4 cup (60 ml) pure maple syrup
- 1 teaspoon vanilla bean paste (or extract)
frosting:
- 100 grams dark chocolate
- 1/4 cup (60 ml) milk
- 1 tablespoon coconut oil
- 1 teaspoon vanilla bean paste (or extract)
- pinch of sea salt
- to decorate: dried rose petals (optional)
Instructions
To make the no-bake brownies:
- Line a 20cm x 20cm square tray with baking paper. Set aside.
- Place the oats, coconut, pecans, cacoa powder and sea salt into the large bowl of a food processor.
- Blitz for 2-3 minutes or until very finely chopped.
- Add the dates, maple syrup and vanilla and blitz again for 2-3 minutes, or until lusciously combined and smooth.
- Place mixture into prepared tray and spread evenly.
- Pop in the fridge for an hour or to ‘set’.
To make the frosting:
- Place the dark chocolate, milk, coconut oil, vanilla and salt into a small saucepan and place over low heat, whisking continuously until melted.
- Pour the mixture into a bowl and pop into the fridge. Every 5 minutes or so remove the bowl from the fridge and give it a good whisk (this whisking creates a gloriously smooth and luscious frosting).
- Once cool, spread the frosting over the brownies.
- Cut into 12 or 16 bars and serve.
Notes
Store no-bake brownies in fridge or freezer. Will keep in fridge for 3-5 days. Will keep in the freezer for 3-4 months.
If no-bake brownie mixture isn’t coming together, add a splash of water (or two) and continue to blitz until the mixture holds.

is the nut free version just as good in your opinion? Or do the nuts make it better? We aren’t nut free but in calculating the calories, the nut-free version saves about 800 calories, so I’m just curious. Ty!

I’ve made this recipe twice. Both times the mixture just didn’t come together. Was far too crumbly, even after a little longer setting time in the fridge. Second batch I added coconut oil and more (rice) syrup and it became sticky and set in the fridge. Any ideas why it was so crumbly to begin with?
