Baking with kids is so much (messy) fun and today I’m thrilled to share a recipe for berry friands with simple step-by-step instructions so you can get your children into the kitchen too.
What are friands?
Friands are a small almond based cake that use egg whites as the raising agent.
They’re usually baked in little oval shaped friand tins but a 12-hole muffin tin works just as well.
Friands sounds fancy, but they’re super simple to make.
Just one bowl, a little sifting, whisking and mixing and voila you’re ready to bake.
We added lemon zest, vanilla bean paste and fresh blueberries and raspberries to our friand batter today and this flavour combination is delicious.
The lemon adds a bright zesty note.
The vanilla bean speckled throughout provides their unmistakable perfume and creaminess that enhances the flavour of all it graces.
And the berries are sublime. Whilst in the oven the berries turn wonderfully jammy and gooey to create pockets of sweet-sour fruity goodness. Yum.
These petite cakes bake in a speedy 20 minutes and whilst they’re in the oven you have the ideal opportunity to mix together a simple buttercream to adorn each berry studded darling.
The buttercream we used today is the CSR All Natural Buttercream Icing Mix (strawberry flavour – oh my yum).
I’m head over heels in love with this buttercream.
It’s super easy to make.
Its rich, luscious and creamy, like a good buttercream should be.
And it uses all natural ingredients (like Dutch Cocoa, Sweet Corn Powder and Beetroot Extract) to create beautiful rich colours with no artificial ingredients.
We used one packet of the CSR All Natural Buttercream to decorate our friands – which was the perfect amount. Just enough to decorate the petite cakes with a little left to lick the bowl and fight over the spoon.
To make your own berry friands follow these simple steps…
Step one:
Begin by preheating your oven to 180 C (350 F) and grease 10 holes of a friand tin with butter. Set aside.
Sift the flour and CSR Soft Icing Mixture into a large bowl.
Step two:
Add the almond meal to the bowl and whisk to combine.
Step three:
Place the egg whites into a separate bowl and whisk until frothy.
Step four:
Pour the whisked egg whites into the bowl containing the flour/almond meal.
Step five:
Add the melted butter, vanilla and lemon zest and whisk to combine.
Step six:
Evenly divide the mixture amongst the prepared tin and top each friand with a small handful of berries. Bake for 20-25 minutes or until a skewer inserted removes cleanly.
Step seven:
Whilst the friands bake, prepare the CSR All Natural Buttercream Icing Mix.
Place the butter into bowl and using an electric mixer beat until light and creamy (approx. 5 minutes).
Step eight:
With the mixer on low speed, slowly add the CSR All Natural Buttercream mixture and water. Continue mixing for 5 minutes or until luscious and creamy.
Step nine:
Dollop a spoonful of butter cream onto the cooled friands, top with fresh berries and a light dusting of CSR Soft Icing Mixture. Then fight over who gets to lick the spoon.

Ingredients
Berry friands:
- 2/3 cup (100 grams) plain flour
- 1 2/3 cups CSR Soft Icing Mixture
- 1 cup (125 grams) almond meal (ground almonds)
- 6 egg whites, whisked until frothy
- 160 grams butter, melted and slightly cooled
- 1 teaspoon vanilla bean paste (or extract)
- zest of 1 lemon
- 125 grams mixed berries (raspberries and blueberries)
Buttercream:
- 1 x 250 gram CSR All Natural Buttercream Icing Mix Strawberry
- 160 grams butter
- 3 teaspoons water
- To decorate: 125 grams fresh berries, CSR Soft Icing Mixture to dust
Instructions
To make the berry friands:
- Preheat oven to 180 C (350 F) and grease 10 holes of a friand tin. Set aside.
- Sift the flour and icing mixture into a large bowl.
- Add the almond meal and whisk to combine.
- Add the egg whites, melted butter, vanilla and lemon zest and whisk to combine.
- Evenly divide the batter between the prepared tin.
- Top each friand with a few berries.
- Bake for 20-25 minutes or until a skewer inserted removes cleanly.
- Allow the friands to cool for 5 minutes before carefully removing from the tin and place on a wire rack to cool completely.
To make the buttercream:
- Using an electric mixer, beat the butter until pale.
- Gradually add buttercream icing mix and water, beating continuously until smooth, approximately 3-5 minutes.
- Top each friand with a generous spoonful of buttercream, top with berries and dust with icing sugar. Enjoy x
Notes
The friands are freezer friendly.
The buttercream can be made ahead of time and stored in the refrigerator until required.
Fresh or frozen berries work perfectly in this recipe.
