I’m so excited to share our favourite Peanut Sesame Soy Noodles with Crispy Tofu recipe with you! I’m obsessed with these noodles and I can’t wait to tell you why!
Ok, my obsession lies all in the peanut sesame soy sauce baby. This stir fry sauce is beyond amazing. It’s spicy, sweet, salty, luscious, thick, with a hint of sesame and all the pea-nutty goodness I love. With a kick of fresh lime, this stir fry sauce is seriously addicting!
It’s also easy to make. Simply pop the sauce ingredients into a jar and shake to combine!
Now, whilst I love love love the incredible flavour of our peanut sesame soy sauce, what makes it extra special is that it ‘shows off’ TWO WAYS in this recipe!
First, the sauce is thrown over the cooked vegetables and noodles (off the heat – very important) which allows the lovely noodles to soak up the yummy soy sesame and peanut flavour creating EXTRA luscious, extra saucy and super slurp worthy noodles. Divine.
Second. The remaining sauce is thrown into the pan and cooked with the crispy golden tofu until it caramelises, browns and creates gnarly bits of golden sauce amongst the tofu. The texture of the little brown bits with the tofu and noodles is stir fry heaven and truly makes this weeknight dinner something special.

Ingredients
Peanut Sesame Soy Sauce:
- 1/2 cup (125 ml) natural peanut butter
- 1/3 cup (80 ml) sesame oil
- 1/3 cup (80 ml) tamari (or soy sauce)
- 1/4 cup (60 ml) rice vinegar
- juice of 1 lime
- 1 teaspoons chilli paste (I used sambal oelek)
- 2 tablespoons coconut sugar (or brown sugar)
- 1 tablespoon fresh ginger, minced
Noodles and Tofu:
- 1 carrot, grated
- 1 cup wombok (chinese cabbage), shredded finely
- 1 cup red cabbage, shredded finely
- 2 cups baby spinach leaves
- 300 grams firm tofu, diced
- 400 grams ramen noodles, prepared according to packet instructions
To Serve:
- 1 lime, quartered
- handful coriander leaves
- 1 tablespoon sesame seeds
Instructions
To make the Peanut Sesame Soy Sauce:
- Place the peanut butter, sesame oil, tamari, rice vinegar, lime juice, chilli paste, coconut sugar and ginger into a jar.
- Shake to combine. Set aside.
To make the Noodles and Tofu:
- Heat a little vegetable oil in a wok over medium-high heat. Add carrot, wombok, red cabbage and baby spinach and stir fry for 1-2 minutes.
- Add noodles, stir fry for 1-2 minutes.
- Place onto a serving plate, drizzle 1/3 cup of the peanut sesame soy sauce over the noodles and toss gently to combine. Set aside.
- Heat a little more vegetable oil in a wok over high heat.
- Add tofu and stir fry until golden and brown.
- Add a 1/3 cup of the peanut sesame soy sauce and stir fry until the sauce sticks to the tofu, caramelises and you have lovely golden pieces of sauce soaked tofu and gnarly brown bits of sauce.
To Serve:
- Place the noodles into bowls, top with tofu, any remaining sauce, coriander leaves and sesame seeds. Pop the lime wedges onto the plate and squeeze over just before digging in.

We made this tonight and it was yummy! I didn’t have rice vinegar so I swapped it for Mirin, and I left out the chili. We’re gluten free So i used rice noodles. Everybody enjoyed it!

This is the most delicious stir fry.. have made it 4 or 5 times with a variety of veg and tofu or chicken. Did half PB and half tahini tonight and still delish!
