I’m so excited to share this super simple recipe for the most amazing Zucchini Slice with you! This isn’t just any old zucchini slice recipe! No, this one pan dinner is extra golden, super cheesy (with both feta AND mozzarella), perfectly flavoured with basil pesto (yum), with little bites of salty prosciutto strewn through-out. It’s seriously so good. It’s everything you love about Zucchini Slice, with a few extra game-changing ingredients.
We enjoyed this veggie-packed slice for dinner, fresh from the oven, oozy, warm and gorgeously golden. We gobbled it up alongside a simple salad of fresh tomatoes and basil. Seriously, delicious! And leftovers the next day made their way into lunch boxes to be eaten cold. You can enjoy this slice either warm or cold – both are just as yummy!
This zucchini slice is so simple to make. Throw everything into a big bowl, mix, add the eggs/oil and mix again. Pour the zucchini flecked mixture into a big ol’ oven pan and bake for 40-45 minutes or until the top is the most amazing golden brown colour with extra crispy edges – we live for those burnished edge pieces. YUM!

Description
This simple-to-make Zucchini Slice recipe will become a family favourite, FAST! It’s delicious, healthy, super golden, perfectly cheesy and is scrumptious served warm or cold, making it the perfect weeknight dinner or lunch box snack!
Ingredients
- 6 zucchini, grated
- 200 grams prosciutto, finely chopped
- 1 1/2 cups (185 grams) cheddar, tasty OR provolone cheese, grated
- 100 grams feta cheese, crumbled
- 1/3 cup (80 ml) basil pesto
- 1 cup (125 grams) plain self raising flour
- salt and pepper, to season
- 8 eggs
- 1/2 cup (125 ml) olive oil
- To Serve: sliced tomatoes and fresh basil leaves.
Instructions
- Preheat oven to 180 C (350 F) and lightly grease an oven proof dish. Set aside.
- Into a very large bowl place the zucchini, prosciutto, grated cheese, feta, basil pesto, flour, salt and pepper and stir thoroughly to combine.
- Place the eggs and oil into a separate bowl and whisk to combine.
- Add the eggs to the zucchini mixture and stir thoroughly to combine.
- Pour the mixture into prepared dish.
- Bake for 40-45 minutes or until gorgeously golden and ‘set’.
- Serve with a simple salad of sliced tomatoes and basil leaves.
Notes
Zucchini Slice is best kept in an air-tight container in the fridge. Will keep for 5 days.
