I’m so excited to share another simple (but oh so delicious) noodle recipe with you today! My family loves loves loves these saucy weeknight noodles and it’s so easy to see why! The mouth-watering stir fry sauce is delicious. It’s spicy, sweet, luscious, glossy and perfectly hinted with ginger and sesame. Yum! The stir-fry sauce is also SUPER SIMPLE to make! Just throw all the ingredients into a jar and shake shake shake! Done. The sauce is also thickened using a little tapioca flour (or cornflour) that ensures the sauce clings, hugs and smothers the noodles, chicken and veggies beautifully. Each bite and slurp of noodles is super saucy and so yum.
This weeknight dinner is truly FAST. This is what you need to do…
- Begin by slicing your veggies and chicken.
- Next, shake together the simple stir-fry sauce in a jar.
- Prep noodles according to packet instructions. Now, with everything prepped – you can begin stir-frying.
- Heat a little oil in a wok and stir fry the veggies until tender.
- Next, stir fry the chicken until golden.
- Return the veggies to the wok along with the sauce and bubble away for 2-3 minutes or until the sauce is luscious and thickened.
- Add noodles.
- Stir and you’re done.
See, super quick. So easy. And unbelievably delicious. This dinner is perfect for during the busy week! BONUS, leftovers are perfect for lunch boxes the following day.
These noodles will take you 20 minutes tops to make and they’re truly a simple dinner your entire family will love. The best part is that you can make this recipe work for you! Simply adjust the recipe to suit what’s in your fridge or your dietary needs. If you like eating vegetarian, swap the chicken for tofu. If you don’t have the listed veggies on hand, replace with any other stir-fry friendly veggies you have in the fridge. Zucchini, broccoli, cauliflower, mushrooms would all be amazing! Don’t have noodles in the pantry? Serve the stir fried chicken and vegetables over a bed of jasmine rice instead. This recipe is infinitely adaptable so please feel free to make it your own.

Ingredients
Spicy Soy & Sesame Sauce:
- 1/2 cup (125 ml) tamari (or soy sauce)
- 1 tablespoon sesame oil
- 1 tablespoon chilli paste (like sambal oelek)
- 1 tablespoon ginger, minced
- 2 tablespoons brown sugar
- 1 tablespoon cornflour (or tapioca flour)
- 1 tablespoon water
Stir Fry:
- 500 grams chicken breast, diced
- oil, to fry in
- 1 red onion, sliced
- 1 bunch broccolini
- 1 red capsicum, sliced
- 400 grams ramen noodles, prepared according to packet instructions
To serve:
- 1 tablespoon sesame seeds
- fresh coriander leaves (optional)
Instructions
To prepare the Spicy Soy & Sesame Sauce:
- Place the tamari, sesame oil, chilli paste, ginger, sugar, cornflour and water into a jar and shake to combine. Set aside.
To prepare the stir fry:
- Heat a little oil in a wok over medium-high heat, add chicken and stir fry for 4-5 minutes or until golden. Place chicken onto a plate.
- Heat a little more oil in the wok over medium-high heat, add onion and stir fry for 1 minute.
- Add broccolini and capsicum and stir fry for 2 minutes or until tender.
- Return chicken to the pan, add noodles and stir fry sauce.
- Simmer for 2-3 minutes or until the sauce has thickened and the chicken is cooked through.
- Divide between bowls, top with sesame seeds and fresh coriander. Enjoy x

Very tasty. I took some out of the pan for Mister 5 before I added the sauce so we could enjoy a little extra spice! I used udon noodles. Will definitely cook again.

Came out great for such few ingredients! The sauce thickened up nicely— I was worried it wouldn’t because I took out the sugar and doubled the chicken which increased the amount of juices mixed in with the sauce. Still had tons of flavor
