Description

Fast, easy-to-make and SUPER delicious Spicy Soy & Sesame Chicken Noodles.  For the nights you’re yearning for spicy, comforting, saucy and nourishing Asian noodles!  Crispy golden juicy pieces of chicken rest on a bed of sauce soaked noodles and stir fried vegetables, making this weeknight dinner insanely delicious.  This super quick dinner can be made and ready to eat in just 20 minutes!  Grab your chopsticks!


Ingredients

Scale

Spicy Soy & Sesame Sauce:

  • 1/2 cup (125 ml) tamari (or soy sauce)
  • 1 tablespoon sesame oil
  • 1 tablespoon chilli paste (like sambal oelek)
  • 1 tablespoon ginger, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon cornflour (or tapioca flour)
  • 1 tablespoon water

Stir Fry:

  • 500 grams chicken breast, diced
  • oil, to fry in
  • 1 red onion, sliced
  • 1 bunch broccolini
  • 1 red capsicum, sliced
  • 400 grams ramen noodles, prepared according to packet instructions

To serve:

  • 1 tablespoon sesame seeds
  • fresh coriander leaves (optional)

Instructions

To prepare the Spicy Soy & Sesame Sauce:

  1. Place the tamari, sesame oil, chilli paste, ginger, sugar, cornflour and water into a jar and shake to combine.  Set aside.

To prepare the stir fry:

  1. Heat a little oil in a wok over medium-high heat, add chicken and stir fry for 4-5 minutes or until golden.  Place chicken onto a plate.
  2. Heat a little more oil in the wok over medium-high heat, add onion and stir fry for 1 minute.
  3. Add broccolini and capsicum and stir fry for 2 minutes or until tender. 
  4. Return chicken to the pan, add noodles and stir fry sauce.
  5. Simmer for 2-3 minutes or until the sauce has thickened and the chicken is cooked through.
  6. Divide between bowls, top with sesame seeds and fresh coriander.  Enjoy x
