Oh I’m so excited to share these SUPER CRUNCHY air-fried Cajun chicken tacos with you today! We’ve been hibernating at home for weeks now so I’m mixing things up with something a little new, different, fun and most importantly kid friendly.
My kids miss school terribly (this home schooling mama isn’t very fun, their words exactly). But one thing I can do (that school can’t) is serve the BEST crispy chicken tacos for lunch! My kids went crazy for these tacos and it’s so easy to see why. These tacos are mouth watering and finger lickin’ good. Let’s chat taco details, shall we?
OK, let’s start with the scrump-diddly-umptious air fried crispy chicken. These babies are crunchy and golden on the outside, seasoned generously with Cajun spices and parmesan cheese, yet tender, moist and succulent in the middle. The chicken bites alone are a HUGE HIT with kids, but nestled in the tacos they’re even better. Each bite is the perfect mix of warm tortilla, zesty lime avocado, crunchy lettuce, crispy chicken and tangy lime yoghurt sauce. So so yummy!
The crunchy bites of air fried Cajun chicken are also super simple to make! Crumbing the chicken takes 10 minutes with minimal fuss. And once nestled in the Russell Hobbs Air Fry Crisp ‘N Bake Toaster Oven take 10 minutes to cook! Super fast! I love air frying the chicken bites. Why? It creates healthier, crunchier results without using oil. BAM!
How to make Crispy Cajun Chicken Tacos using the Russell Hobbs Air Fry Crisp ‘N Bake Toaster Oven
- Cut chicken breast into bite sizes pieces.
- Pop chicken into bowl with buttermilk and stir to combine. TIP: This clever trick helps to create the most tender chicken, EVER!
- Place the corn flake crumbs, flour, cajun spices, parmesan cheese, salt and pepper into a bowl and mix to combine.
- Dredge each piece of chicken in the breadcrumbs and place onto the wire rack of the Russell Hobbs Air Fry Crisp ‘N Bake Toaster Oven.
- Using the ‘air fry’ setting bake the chicken bites for 10 minutes or until golden, crunchy and cooked through.
- To assemble the tacos, warm tortillas (according to packet instructions), top with lime avocado, shredded iceberg lettuce, crispy cajun chicken bites and drizzle with zesty lime yoghurt sauce. Eat! Yum!

I love how simple they are to make and I love even more the empty dinner plates I see after dinner (kinda never happens, so I’ll take the win). I also use the air-fry function to make the crunchiest home made sweet potato chips EVER!
If your kids aren’t into spice, feel totally free to skip the Cajun spices! The chicken is still absolutely delicious thanks to the crunchy corn flake crumbs and parmesan cheese!

Description
Crispy Cajun chicken bites, oven air-fried and served in warm tortillas with mashed lime avocado, crunchy iceberg lettuce with an addicting tangy zesty garlick-y sauce. Fun, different, a little spicy, totally crunchy and full of flavour – your kids will go crazy for these tacos.
Ingredients
Crispy Air Fried Cajun Chicken:
- 500 grams chicken breast, cut into bite-sized pieces
- 1/2 cup (125 ml) buttermilk
- 2 1/2 cups (300 grams) corn flake style breadcrumbs
- 2 tablespoons flour
- 2 1/2 tablespoons store-bought Cajun seasoning
- 2/3 cup (90 grams) parmesan cheese, grated
- sea salt and pepper, to season
Zesty Lime Sauce:
- 1 cup (250 grams) greek style yoghurt
- juice and zest of 1 lime
- 1 clove garlic, minced
- 1 handful coriander leaves
- 1 tablespoon olive oil
- sea salt, to season
Tacos:
- 6 tortillas, warmed according to packet instructions
- 1 avocado, mashed with the juice of 1 lime
- 2 cups iceberg lettuce, finely shredded
Instructions
To make the Crispy Air Fried Cajun Chicken:
- Place the chicken and buttermilk into a bowl and stir to combine.
- Into a separate bowl, place the cornflake crumbs, flour, Cajun seasoning, parmesan, salt, pepper and stir to combine.
- Dredge each piece of chicken in the breadcrumbs and place onto the wire rack of the Russell Hobbs Air Fry Crisp ‘N Bake Toaster Oven.
- Using the ‘air fry’ setting bake the chicken bites for 10 minutes or until golden, crunchy and cooked through.
To make the Zesty Lime Sauce:
- Place the yoghurt, lime zest and juice, garlic, coriander, olive oil and salt into the jug of a food processor and blitz for 1-2 minutes or until lusciously combined.
To assemble the tacos:
- Top warmed tortillas with lime avocado, shredded iceberg lettuce, crispy cajun chicken bites and drizzle with zesty lime yoghurt sauce. Enjoy x
Notes
To make the Crispy Cajun Chicken in a conventional oven: Place the crumbed chicken onto a tray lined with baking paper, drizzle with a little olive oil and bake in a preheated oven (200 C) for 10 minutes or until chicken is golden and cooked through.
