I’m so excited to share these easy-to-make Sticky Date Granola Cookies with you! I love sticky date pudding! And these lovely little cookies taste just like the real thing! They smell heavenly, are intensely golden, insanely rich, perfectly chewy, a little gooey, super comforting, so basically….the ULTIMATE cosy cookie! A cookie (and sticky date pudding) lovers dream, these cookies are made even more delicious thanks to the added crunch offered up by coconut, pepitas, raisins and coconut! Sticky Date Pudding + Granola = BEST. COOKIES. EVER.
How to make Sticky Date Granola Cookies
Whilst these cookies are delicious, I’m delighted to say – they’re SUPER SIMPLE to make! Here’s what you need to do…
Step One: Cook the sticky dates
Simply place the lovely medjool dates into a small saucepan along with the brown sugar and butter and cook over medium heat for 7 minutes or until the dates are beautifully tender and sticky. Stop to take in that unmistakable sticky date fragrance. Yum.
Step Two: Stir together the cookie dough
Place the sticky date mixture and the rest of the ingredients into a big bowl and stir.
Step Three: Roll into rounds
Take 2 tablespoons of the mixture, roll into rounds then gently press into 5 centimetre sized cookies.
Step Four: Bake
Pop the lovely sticky date granola cookies into a preheated 160 C oven and bake for 12-15 minutes or until golden and set. Allow the cookies to cool on the tray.

Description

Packed with coconut, oats, pepitas and raisins and scented with heavenly cinnamon and vanilla – there’s nothing not to love about these cookies.
Ingredients
- 1 1/2 cups (360 grams) medjool dates, pitted (approx. 15 dates)
- 1/2 cup (85 grams) brown sugar
- 125 grams butter
- 1 teaspoon bicarbonate soda
- 1 cup (140 grams) wholemeal spelt flour
- 1 cup (90 grams) rolled (traditional) oats
- 1 teaspoon cinnamon
- pinch of salt
- 1/4 cup (40 grams) pepitas
- 1/2 cup (45 grams) shredded coconut
- 1/2 cup (85 grams) raisins
- 1 egg
- 1 teaspoon vanilla bean paste (or extract)
Instructions
- Preheat oven to 160 C (320 F) and line 2 cookie trays with baking paper. Set aside.
- Place the dates, sugar and butter into a saucepan and place over medium heat stirring until the butter is melted. Continue stirring and cook for a further 5 minutes.
- Remove from the heat, add the bicarbonate soda and stir to combine. Set aside to cool for 5 minutes or so.
- Meanwhile, into a large bowl place the flour, oats, cinnamon, salt, pepitas, coconut and raisins and stir to combine.
- Add the slightly cooled date mixture, egg and vanilla to the bowl and stir to combine.
- Take 2 tablespoons of the dough and shape into rounds.
- Place rounds onto prepared tray and flatten to create a 5-centimetre sized cookie.
- Bake for 12-15 minutes or until golden.
- Allow cookies to cool on tray. Enjoy x
Notes
Cookies are best kept in the refrigerator in an air tight container. Will keep for 3-4 days.
Cookies are freezer friendly. Store in an airtight snap lock bag. Will keep for 3 months.
