Description
Santa’s favorite cookies! Soft and chewy pistachio cookies dotted with glacé cherries as bright as Rudolph’s nose. The ultimate holiday cookie!

- 2 cups (300 grams) raw pistachios, shelled
- 1 cup (220 grams) brown sugar – If desired, please feel free to halve the amount of sugar used
- 1 tbsp honey
- 1 tsp vanilla extract
- Zest of 1 lemon
- 3 egg whites
- 2 cups (200 grams) almond meal (ground almonds)
- 1 cup (140 grams) icing sugar
- 20 glace cherries
Instructions
- Preheat oven to 180 degrees celsius (350 F) and line a cookie tray with baking paper. Set aside.
- Place the pistachios and sugar into the large bowl of a food processor and blitz until the nuts are finely chopped.
- Add the honey, vanilla, lemon zest, egg whites and almond meal and pulse until combined.
- Take heaped tablespoons of the mixture and shape into balls. Arrange the cookies on the prepared tray, spacing them 1-2 centimetres apart. Slightly flatten each cookies and gently press a glace cherry into the centre of each cookie.
- Bake for 12-15 minutes or until slightly golden. Allow to cool for 5-10 minutes before placing the cookies onto a wire rack to cool completely. Enjoy x
