Description

Santa’s favorite cookies! Soft and chewy pistachio cookies dotted with glacé cherries as bright as Rudolph’s nose. The ultimate holiday cookie!

Ingredients

  • 2 cups (300 grams) raw pistachios, shelled
  • 1 cup (220 grams) brown sugarIf desired, please feel free to halve the amount of sugar used
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 3 egg whites
  • 2 cups (200 grams) almond meal (ground almonds)
  • 1 cup (140 grams) icing sugar
  • 20 glace cherries

Instructions

  1. Preheat oven to 180 degrees celsius (350 F) and line a cookie tray with baking paper.  Set aside.  
  2. Place the pistachios and sugar into the large bowl of a food processor and blitz until the nuts are finely chopped.  
  3. Add the honey, vanilla, lemon zest, egg whites and almond meal and pulse until combined.  
  4. Take heaped tablespoons of the mixture and shape into balls.  Arrange the cookies on the prepared tray, spacing them 1-2 centimetres apart.  Slightly flatten each cookies and gently press a glace cherry into the centre of each cookie.  
  5. Bake for 12-15 minutes or until slightly golden.  Allow to cool for 5-10 minutes before placing the cookies onto a wire rack to cool completely.  Enjoy x
