I’ve lost count how many mornings of late have begun with these super simple, easy peasy 2 ingredient pancakes.
My little ones are absolutely obsessed. Oh and so am I.
Consisting of only banana and eggs (we have experimented with blueberries too – YUM), these easy peasy pancakes can be whipped up in less than 10 minutes AND they taste utterly gorgeous. Especially, when topped with a little greek yoghurt, fresh fruit, a sprinkle of your favourite muesli and of course a little drizzle of honey.
And because these breakfast pancakes are so high in protein – they keep little tummies full and satisfied for longer.
There has also be an evening or two in which I’ve turned to these little darlings for dinner. You know the kind of day – everything goes to ‘crazy town’ and you have no time or energy for preparing dinner….this recipe comes in so handy. And the kids don’t mind at all – they are crazy for these simple pancakes and I know you will be too.
To create your own easy peasy 2 ingredient pancakes simply…
Begin by mashing one banana in a small bowl.
Add 2 eggs and whisk to combine.
Heat a small frypan (I use our mini egg frypan – big enough to cook 1 egg at a time…so cute!) over low-medium heat and grease with a little butter.
Pour half the batter into the pan and cook nice and slowly for 2-3 minutes or until firm enough to flip.
If you like, feel free to add a little extra fruit – we added a handful of fresh blueberries.
Firmly and confidently flip the gorgeously golden pancake.
Cook for another minute then place onto a plate and cook remaining pancake.
Place the pancake onto a serving plate, top with fresh fruit, a little yoghurt, a scattering of muesli and a drizzle of honey. Enjoy x

- Total Time: 7 mins
- Yield: 2 pancakes 1x
Ingredients
- 1 banana
- 2 eggs
- blueberries (optional)
- butter, to fry in
- yoghurt, muesli, fresh fruit and honey – to serve
Instructions
- Place banana into a small bowl and mash with a fork. Add eggs and whisk to combine. Heat a small frypan over low-medium heat and grease with a little butter (or coconut oil). Add half of the mixture (add the optional blueberries if you wish) and cook nice and slowly for 3-4 minutes or until golden and firm enough to flip. Gently yet confidently flip and cook for another minute. Place onto a plate and cook second pancake. Serve pancakes warm topped with a little yoghurt, muesli, fresh fruit and a drizzle of honey. Enjoy x

Thank you for the recipe! Made it this morning, the 1st pancake was flipped with confidence and the 2nd, well that one didn’t turn out too good. I added blueberries and a dash of cinnamon, yummy flavors!!

Hahahah, the same happened to me! I realised the pancakes have to be cooked nice and slow so they become quite firm before flipping or else they can be super tricky. But they’re so delicious and so simple, I just love this recipe. Glad you liked it too, oh and the cinnamon and blueberries…YUM!!!
