easy peasy 2 ingredient pancakes

Ingredients

  • 1 banana
  • 2 eggs
  • blueberries (optional)
  • butter, to fry in
  • yoghurt, muesli, fresh fruit and honey – to serve

Instructions

  1. Place banana into a small bowl and mash with a fork.  Add eggs and whisk to combine.  Heat a small frypan over low-medium heat and grease with a little butter (or coconut oil).  Add half of the mixture (add the optional blueberries if you wish) and cook nice and slowly for 3-4 minutes or until golden and firm enough to flip.  Gently yet confidently flip and cook for another minute.  Place onto a plate and cook second pancake.  Serve pancakes warm topped with a little yoghurt, muesli, fresh fruit and a drizzle of honey.  Enjoy x
