What’s your families favourite breakfast cereal?
We adore toasted muesli.
And to be totally honest, usually purchase the store bought variety.
However, after tasting how unbelievably delicious {and simple to make} our home made muesli is – we won’t be going back and we promise YOU won’t either!
Like most of our little morsels of deliciousness, this recipe was born out of necessity.
Early one morning, we had a hankering for a little fresh fruit and yoghurt and needed a little sprinkle of our favourite toasted muesli to top things off.
With none to be found, we decided to put together our favourite muesli ingredients; oats, coconut, cashews and flaked almonds, squish them together with a drizzle of coconut oil and maple syrup and toast them in a hot oven for 10 minutes and with a few medjool dates added…
“the results were amazing!”
Whilst we were nestled around the table, munching away on a sublime breakfast of apple, raspberries, yoghurt and our homemade muesli I couldn’t believe how much more delicious (and healthy) OUR muesli was.
And it took a mere 5 minutes to put together!
If you ever contemplated ditching the sugary store bought breakfast cereal in exchange for a healthy homemade muesli, made with love…this recipe is for YOU!
Simply…
Begin by preheating the oven to 180 degrees celsius (350 F) and line an oven tray with baking paper. Place the oats, coconut, almonds and cashews onto the prepared tray.
Add the coconut oil and maple syrup and ask your little kitchen helper to squish and mix the muesli together. Pop into the oven for 10-15 minutes or until golden and lightly toasted.
Allow the muesli mixture to cool.
Meanwhile, set your little one up at the bench and ask them to help you prepare the medjool dates. With a chopping board and small serrated knife, guide your little one as they slice the dates and open each one to remove the pit. This is a super fun activity most kids (with guidance) are capable of. Carefully chop that dates into small pieces.
Once cooled, enjoy the toasted and wonderfully fragrant muesli alongside a little fresh fruit and yoghurt. Enjoy x
