I love making granola at home because it means I can control the amount of sugar and ingredients added! Plus, I almost always have the ingredients on hand! With just a few pantry staples, a little maple syrup and olive oil, home made granola is just 30 minutes away! Oh and my kids love granola for breakfast or as an after school snack!
Our usual ‘go-to’s’ granola recipes are our pumpkin pie granola or our chocolate hazelnut granola. They’re both delicious. But this Lemon Almond and Chia Seed Granola is perfect for summer. It’s packed with healthy ingredients, zesty, crunchy and bursting with citrus-y flavour! Served with cool dollops of yoghurt and fresh raspberries, this granola makes the perfect summer breakfast.
This granola is also very simple to make. Simply pop all of the ingredients into a big bowl, stir, pop onto a tray and bake until golden. So simple. But so delicious.

CRUNCHY GRANOLA TIPS
- Ensure your oven is preheated. This will help to create golden crunchy granola your family will love.
- Line the oven tray with baking paper so the sweetener sticks to the nuts and oats rather than the pan. Also helps with the washing up.
- Be sure to give the ingredients a really good stir to ensure everything is evenly coated.
- Once in the oven, give the granola a stir every 5 minutes or so to ensure even browning and clumping.
- The granola crisps as it cools so don’t be tempted to overcook it. Bake for 20-25 minutes and once it’s slightly golden and smells toasted – the granola is done.
- Allow the granola to cool completely before breaking it up. This will create the lovely clumps that are so delicious.
- Lastly, don’t be afraid to mix it up! Granola recipes are infinitely adaptable so don’t be afraid to swap the nuts/seeds etc with what you have in the pantry.
HOW TO STORE GRANOLA
- The granola is best kept in an air tight container in the pantry. It will keep for up to 3 months. I however, leave ours on the kitchen bench because who doesn’t love a cheeky handful of granola goodness.
HOW TO SERVE GRANOLA
- Serve the granola with fresh berries and a dollop of greek yoghurt for a delicious and healthy breakfast.
CAN GRANOLA BE MADE ‘NUT-FREE’?
- Yes, you absolutely can. Simply omit the almonds all together or replace them with an extra cup of oats or shredded coconut. This makes the granola a lunch box friendly snack.
To make your own lemon almond and chia seed granola, follow these simple steps…
Begin by preheating your oven to 170 C (335 F) and line an oven tray with baking paper. Set aside.
Place the oats, almonds, chia seeds and pinch of salt into a large bowl and stir to combine.
Add the olive oil (or melted coconut oil), maple syrup, lemon zest and vanilla bean paste and stir thoroughly to combine.
Arrange granola on the prepared tray in an even layer.
Bake for 15-20 minutes (stirring every 5 minutes for even cooking) or until golden.
Allow the granola to cool completely.
Store the cooled lemon almond and chia seed granola in an air tight container for up to 3 months.
To serve, place the granola into a small bowl, add yoghurt or milk, fresh berries and a drizzle of maple syrup (optional). Enjoy xx

Ingredients
- 3 cups (450 grams) rolled (traditional) oats
- 1 cup (140 grams) almonds, roughly chopped
- 1/3 cup (55 grams) white (or black) chia seeds
- pinch of salt
- 1/2 cup (125 ml) lightly flavoured olive oil (or melted coconut oil)
- 1/3 cup (80 ml) pure maple syrup
- zest of 2–3 lemons
- 1 tablespoon vanilla bean paste (or extract)
Instructions
