Description

This Lemon Almond and Chia Seed Granola is a healthy breakfast or snack, made with wholesome ingredients! It’s made with oats, almonds, chia seeds, olive oil, naturally sweetened with maple syrup, and bursting with citrus-y zesty lemon flavour. This golden and extra crunchy lemon scented granola is one of my kids favourites, and it’s absolutely delicious for breakfast or an after-school snack. Simple to make and requiring just 7 ingredients, you’ll never buy store-bought granola again!


Ingredients

  • 3 cups (450 grams) rolled (traditional) oats
  • 1 cup (140 grams) almonds, roughly chopped
  • 1/3 cup (55 grams) white (or black) chia seeds
  • pinch of salt
  • 1/2 cup (125 ml) lightly flavoured olive oil (or melted coconut oil)
  • 1/3 cup (80 ml) pure maple syrup
  • zest of 23 lemons
  • 1 tablespoon vanilla bean paste (or extract)

Instructions

  1. Preheat oven to 170 C (335 F) and line an oven tray with baking paper.
  2. Place the oats, almonds, chia seeds and salt into a large bowl and stir to combine.   
  3. Add the olive oil, maple syrup, lemon zest and vanilla and stir thoroughly to combine.
  4. Arrange mixture in an even layer on prepared tray. 
  5. Bake for 15-20 minutes (stirring every 5 minutes to ensure even cooking) or until golden and toasted.
  6. Allow the granola to cool completely.  Store in an air tight container for up to 3 months.  Serve with milk/yoghurt and fresh berries.  Enjoy x

Notes

Store granola in an air-tight container in the pantry for up to 3 months.

Can be made ‘nut-free’ by omitting the almonds.
