Tip for smooth chia seed pudding
- Grind the chia seeds (to almost dust) using the food processor PRIOR to adding them to the rest of the ingredients.
- Once the wet ingredients are added, blitz the pudding for 2-3 minutes.
- Set the pudding overnight in the fridge to achieve ultimate creaminess.

Place the ground chia seeds, cacao, almond milk, peanut butter, maple syrup, vanilla bean paste and pinch of salt into the jug of a blender. Pop the lid on and blitz for 2-3 minutes or until thoroughly combined.
Evenly divide the creamy chia pudding mixture between 4 glasses. Place in the fridge overnight to set. To serve; top each chia pudding with a dollop of creamy coconut or greek yoghurt and a generous pinch of grated chocolate and finely chopped peanuts. Enjoy x

Ingredients
- 2/3 cups (120 grams) white (or black) chia seeds, finely ground
- 3 heaped tablespoons cacao
- 3 cups (750 ml) chocolate almond milk
- 2/3 cup (160 grams) smooth natural peanut butter
- 1/3 cup (80 ml) pure maple syrup
- 1 teaspoon vanilla bean paste (or extract)
- pinch of salt
- To serve: yoghurt, grated dark chocolate and chopped peanuts.
Instructions
- Place the ground chia seeds, cacao, almond milk, peanut butter, maple syrup, vanilla and salt into the jug of a blender.
- Pop the lid on and blitz for 2-3 minutes or until lusciously combined.
- Evenly divide the mixture between 4 glasses.
- Refrigerate for 6 hours or over night.
- To serve: top with a dollop of yoghurt and a scattering of grated chocolate and finely chopped peanuts. Enjoy x
Notes
To grind the chia seeds: Place chia seeds into the jug of a food processor and blitz until finely ground (almost dust like consistency).
Store chia seed pudding in the fridge. Will keep for 2-3 days.
