Description

Cherry Bliss Balls made with fresh cherries, coconut, almond meal, coconut oil, vanilla and sweetened with a little maple syrup.  These bliss balls are the ultimate healthy sweet treat and taste just like your favourite chocolate bar. A cheeky chocolatey treat that’s delicious, simple and quick to make in just 15 minutes.


Ingredients

Scale
  • 1½ cups (150 grams) almond meal (ground almonds)
  • 2 ½ cups (200 grams) desiccated coconut 
  • ¼ cup (80 ml) pure maple syrup
  • ¼ cup (50 grams) coconut oil, melted and slightly cooled
  • 1 teaspoon vanilla bean paste (or extract)
  • pinch of salt
  • 3/4 cup (170) grams fresh cherries, pitted
  • 100 gramdark chocolate, melted

Instructions

  1. Place the almond meal, coconut, maple syrup, coconut oil, vanilla, salt and cherries into the bowl of a food processor.
  2. Blitz until finely chopped and thoroughly combined.
  3. Take heaped teaspoons of the mixture and using wet or oiled hands shape into rounds.
  4. Place in the fridge for 20 minutes to ‘set’.
  5. Dip each bliss ball into melted chocolate, allowing excess to drip off.
  6. Place onto a tray lined with baking paper and place in the fridge until set. Enjoy x

Notes

Store bliss balls in the fridge for up to 4 days.

These bliss balls are freezer friendly.  Store in an air tight container for up to 3 months.
